
Grillin season is in full force. Here’s a little burger I made a while back. Fat patties (too fat apparently) of angus beef seasoned simply with salt and black pepper and grilled over charcoal. Roasted shallots, sharp cheddar and microgreens assist the meat.
What have you been grillin up?
I have plans to grill a boned leg of lamb with Moroccan spices and a barbeque sauce made with dates this Saturday. Wish me luck.

so the lil burger was suppose to be a slider but i didn’t make the patty flat enough. it looks huge huh? it was only as big as my palm though. gotta work on that this grillin season.

I fired up my Weber charcoal grill last night and grilled up some spicy chicken wings and steak tops. Good stuff.

1 4 lb chicken, pushed flat & rubbed with cracked coriander (1/4 cup), fresh herbs (whatever) , 6 cloves of garlic & evoo - smoked as far from the coals as possible in a closed charcoal grill with wet applewood at 300-350 for 1 to 1 1/2 hours. (props to Chris Schleninger)
So so so good…although that burger looks damn fine!
